Coffee soufflé (4 persons)
Kaffee Soufflé

  • 40 g of butter
  • 30 g of flour
  • 100 g of sugar
  • 1/4 of liter of milk
  • 4 eggs
  1. 3 spoons of coffee extract
  2. Add the milk to the sugar and the extract of coffee - boil them
  3. Make a béchamel with the butter and the flour
  4. Add the milk into the pan, by moving, to obtain a smooth and thick preparation.
  5. Separate the white of eggs from the yellow. Outside the fire, add the yellow one by one by moving for a long time. Beat the whites in snow.
    Incorporate delicately the whites into the preparation.
  6. Fill it into a buttered mould, cook it in the oven for about 35 minutes, around 180 °c.
