Fashion.at recipe for Pizza Napoli with yeast-free, herb spiced dough from flour and fine oatmeal

Fashion.at's recipe for Pizza Napoli is a version of the classical Neapolitan dish with tomatoes, mozzarella and additional anchovies, olives and rucola. The dough is made with ingredient variations beginning with baking powder instead of yeast, fine oatmeal that replaces one third of the necessary amount of flour for one baking plate, and vegan soya milk. The dough is spiced with dried oregano and basilicum, pepper, herb salt and pressed three garlic cloves.

Preparation and baking time is around 40 minutes.


Ingredients for one baking plate (four portions):

  • 200 grams of wheat flour
  • 100 grams fine oatmeal
  • 1 teaspoon baking powder
  • ½ teaspoon 7 herbs salt
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basilicum
  • 3 cloves garlic - pressed
  • 200 milliliters soya milk
  • 1 ½ tablespoon olive oil


Preparation:

Mix flour and baking powder with the spices before adding the liquid ingredients. Mix the whole with the dough hook to a smooth mass. Roll the dough out on a floured baking paper which can be easily transferred to the baking plate. Now, the dough is ready to get its topping.


Topping (such as on view at the picture above, before baking):

  • 400g canned tomatoes (peeled tomatoes with sauce)
  • 200 grams anchovy filets
  • 6 cherry tomatoes, quartered
  • 140 grams black olives, divided in halves
  • 125 grams mozzarella, diced
  • Rucola (the salad can be added before or after baking; added after baking, the bitter rucola taste is more intense)

Baking:
Bake the pizza in the oven at 220 °C for about 15 minutes.
