Fashion.at's Regional Seasonal Vegetables x Energy-Saving Recipe: Zucchini Pasta

Today, Fashion.at tested a new energy-saving recipe consisting of vegetables of the season in a creamy sauce with pasta. Pasta and sauce can be cooked in one pot which saves money for the needed electricity or gas. The second money-saving pillar beneath the cooking procedure on only one flame instead of two and this way fewer dishes to wash, is the main ingredient zucchini. The vegetables are from the regional seasonal calendar in Austria which means that they are harvested currently in the region and are offered in many supermarkets for attractive prices.
The very low calorie vegetables are rich in the minerals calcium, magnesium, iron and vitamins like A, B, and C. Freshly harvested zucchini can be stored at a cool place for two or three weeks. The vegetables can be used for various dishes like salads, soups, or such as Fashion.at did today, for a creamy pasta. Fashion.at started with a recipe found online and changed the amount of selected ingredients for a lighter and 'greener' (more zucchini) version.

Except the two main ingredients zucchini and ricotta cheese, everything else was taken from Fashion.at's basic stock of kitchen ingredients.


Ingredients for 4 portions:

  • 3 zucchini
  • 125g ricotta
  • 3 cloves of garlic
  • 1 lemon
  • 250 g shorter sized pasta (farfalle)
  • Olive oil
  • 3/4 l water
  • 1/8 l milk
  • Chopped basil (Fashion.at used frozen pre-chopped basil)
  • Freshly ground pepper
  • Salt

  • For the optional side dish: 40 gr grated parmesan

Preparation:

  • Quarter the zucchini lengthwise and cut them into thin slices
  • Slice the garlic
  • Heat the olive oil in the pan
  • Add the zucchini and garlic, the grated lemon zest and the lemon juice
  • After it sauteed around four minutes, add water, milk, ricotta, salt, pepper and the pasta
  • Let it simmer until the pasta are al dente
  • Season with basil and if necessary refine the taste with salt and pepper


At Fashion.at, the creamy zucchini pasta was served with optional grated parmesan.
