Fashion.at's recipe for apricot-marzipan-vanilla-yogurt dessert with cherries and cashews, served in a mug



It's apricot and cherry time in Austria! Apricots from regional harvests are available from July to August, cherries from the regions in June and July (source: the seasonal calendar at gesundheit.gv.at). These vitamin- and mineral-rich fruits are currently the favorites at Fashion.at for afternoon dessert with coffee. The recipe is inspired by apricot dumplings filled with marzipan and was developed after a basket of apricots from a nearby apricot tree arrived in the kitchen of Fashion.at.


Fashion.at's recipe for apricot-marzipan-vanilla yoghurt with cherries and cashews

Ingredients for 3 desserts in mugs. It's important to choose well-ripened fruits!

  1. Pit the cherries and place about four to five cherries in each mug
  2. Core four to five apricots, put them in a blender with the marzipan (ca. 2 teaspoons) and the vanilla yogurt (180 grams) and puree until smooth
  3. Pour the apricot-marzipan yogurt into the mugs
  4. Top with plain yogurt (250 grams)
  5. Cover with cashews
