Fashion.at recipe for the period of fasting: Pea soup with chili flakes and nutmeg


Since last week, fasting has been a topic in Austria, especially because of the healthy recipes that are presented during the 40 days until Holy Thursday. The period of 40 days refers to the life of Jesus, who fasted for 40 days in the desert and had to resist the devil who tried to tempt him. In Austria, fasting during Lent is not necessarily tied to a religion. It has become a tradition to improve health and fitness through conscious eating with a focus on vegetables. Soups are typical dishes because they are filling and easy to digest. The following recipe for pea soup provides many important nutrients. It's one of Fashion.at's favorite soups - all year round, not just before Easter.

Here are the key healthy ingredients that provide the floral-fruity flavor while strengthening muscles and bones and protecting with antioxidant and anti-inflammatory properties: Peas are rich in vitamins (especially B vitamins), minerals, and protein, which is important for muscles and bones, but low in calories. Chili flakes, like nutmeg, aid digestion and have anti-inflammatory effects. Many online recipes for pea soup do not list chili or garlic as ingredients. But even garlic goes well with a little chili and oatmeal. Garlic boosts the immune system and has antioxidant properties.

Ingredients:

  • 1 tablespoon butter
  • Grated zest of 1/3 lemon
  • Some chili flakes for the pea bouquet (the soup is not supposed to be spicy, so use a little chili; the spice brings out the flavor of the peas in a fruity, fresh way)
  • 3 cloves of garlic
  • 1 medium onion
  • 500 gr peas
  • 900 ml vegetable broth
  • 1 tablespoon oatmeal
  • 1 teaspoon crème fraîche
  • Pinch of nutmeg
  • Salt and pepper to taste

Preparation:

  1. Heat the butter in a pot and sauté the garlic, onion, lemon zest and chili flakes.
  2. Add the peas and sauté for a minute.
  3. Add the vegetable broth and bring to a boil.
  4. Reduce heat and simmer for about 5 minutes.
  5. Add oats and simmer for another 5 minutes.
  6. Stir in crème fraîche and nutmeg.
  7. Simmer for 3 minutes.
  8. Puree the soup
  9. Season to taste with salt and pepper.

Serve and enjoy.
