Fashion.at recipe tip: Strawberry dumplings with walnut covering from an old Bohemian recipe


Vienna is known for its sweet dishes with roots in Bohemian cuisine. Bohemia was one of the crown lands of the Austrian Empire until 1918. Its capital, Prague, was an important city in the empire. Bohemia later became part of Czechoslovakia and is now the Czech Republic.

An old Bohemian cookbook handed down through generations is the source of one of Fashion.at's favorite dishes: Dumplings filled with fruits. The time for fruit dumplings has come again, and strawberries, rich in vitamin C, folic acid and with antioxidant properties, are a good choice for a sweet lunch or afternoon snack with coffee or tea.

According to the seasonal calendar of the Austrian Ministry of Health, the main growing areas in Austria are Lower and Upper Austria. The calendar is a good source of inspiration for dishes by selecting regional vegetables or fruits. For example, the seasonal calendar shows that strawberries are harvested and available from regional farmers from May through August. Ingredients:

The following recipe has been used for generations:

  • 300g low fat quark
  • 200 g flour
  • 1 egg
  • 70 g butter
  • a pinch of salt

To coat the dumplings, you can add various grated nuts to the breadcrumbs. Fashion.at used walnuts.

  • 1 teaspoon butter
  • 100 gr breadcrumbs
  • 100 gr grated walnuts

Preparation:

  • For the dough, just mix everything together. Start with the butter and egg, then add the low-fat quark. When all three ingredients are mixed, add the flour and salt.
  • Divide the dough - for larger strawberries you will need more dough to wrap them in.
  • Wrap the strawberries tightly without leaving any air pockets.
  • Place the dumplings in boiling salted water and cook for about 10 minutes.
  • Meanwhile, fry the breadcrumbs and nuts in butter.
  • The last step is to roll the dumplings in the roasted breadcrumb-nut mixture.
