A new address in an old Viennese meeting zoneOn Saturday evening, 5 September, the Sanatorium will officially open at Postgasse 2, 1010 Vienna, in the passage towards Dr.-Karl-Lueger-Platz. The location sits close to the MAK – Museum of Applied Arts and the Austrian Academy of Sciences, in an area where very different forms of Viennese social life meet: traditional coffeehouses, old-style inns, established restaurants, cultural institutions and places associated with artists, media and students. The immediate neighbourhood already has its own rhythm, from Café Engländer and Café Prückel to traditional restaurants and newer international concepts. Sanatorium enters this setting not as another conventional restaurant, but as a hybrid between bar, salon, dining space and nightlife venue.From New York bar culture to Viennese hospitalityThe project is being developed by Albert and Jakob Trummer, who bring experience from New York's hospitality and bar scene back to Vienna. Albert Trummer is known for his scientifically and botanically inspired cocktail approach. At Sanatorium, so-called pharmaceutical cocktails are reworked with botanical infusions and seasonal ingredients. The concept also draws on the influence of the late New York chef David Bouley, described by the Trummers as a close friend and mentor. The division between day and night is central to the idea. During the day, Sanatorium is intended as a place for food, meetings and conversation. In the evening, cocktails, music and curated art take over. Regular exchanges between the Vienna and New York bar teams are planned to keep the concept connected to its international roots.Martin Ho brings X Club and Ay-VyThe other significant element is the connection with Martin Ho. His X Club is announced as moving into the Souterrain after around 15 years at Wollzeile. The Private Members Club, created by Ho and Samy Zayed, retains its members-only principle and characteristic black key. Ho is simultaneously pushing his hospitality activities beyond Vienna. The first Ay-Vy restaurant opened in Hanoi, Vietnam, on 20 August; a Dubai opening is planned for mid-September. In Vienna, the concept contributes an Omakase-oriented sushi element, with fourth-generation sushi chef Yuki Sakamoto responsible for the cuisine. The menu also references creations associated with Ho's former DOTS restaurants.A guest list that reads like a city networkFashion.at has taken a look at the guest list for the opening. It brings together names from fashion and design, gastronomy, medicine and health, music, film and television, politics, business, media, advertising, culture, museums, law and the creative industries. The mix is notable less for one particular celebrity than for the breadth of Vienna's professional and cultural networks represented. That makes the opening interesting beyond the launch of another bar. If the guest list is an indication, Sanatorium's first evening could become one of Vienna's more visible social gatherings of late summer — a meeting point between established city circles and a hospitality concept deliberately looking towards New York and Asia. And the timing adds another layer: 5 September falls just as Vienna's summer holidays draw to a close.
